 Eggless Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 1 cup milk (you can use any kind of milk, such as dairy, almond, soy, etc.)
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil for cooking

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix together the milk, melted butter or oil, and vanilla extract (if using).
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes more.
  7. Repeat with the remaining batter, greasing the skillet as needed.
  8. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, whipped cream, or chocolate chips.
